Sip Barcelona’s best cocktails in Las Vegas for a limited time
It takes a certain kind of bar to get named the best in the world. SIPS Drinkery House in Barcelona earned that title from the World’s 50 Best Bars organization in 2023, then held the third spot globally in both 2024 and 2025, picking up Best Bar in Europe along the way. Starting October 31, a version of it lands at Caesars Palace. For two months only.
The pop-up runs through December 31 at VISTA Cocktail Lounge inside Caesars Palace, where the Barcelona bar’s founders, Simone Caporale and Marc Álvarez, are bringing their signature cocktails to the Strip as part of the resort’s 60th anniversary celebrations. VISTA is near Amalfi by Bobby Flay and Dominique Ansel Las Vegas.
What SIPS actually is
SIPS opened in 2021 in Barcelona’s Eixample neighborhood. Flavor first. That is the whole philosophy. The glassware, the presentation, the ingredients all exist to make the drink better, not to make the photograph better, which in 2021 was a more contrarian position than it sounds. Condé Nast Traveler described it as an experience full of technique, creativity, and no barriers. Tasting Table noted that serious cocktails are served in unserious forms. Both are accurate. Neither quite captures it.
What is being served
Two signature cocktails anchor the Las Vegas menu. The Purple Rain reimagines a whiskey sour using bourbon mellowed with wild sour honey and beetroot, served in a way that makes the original seem like it was always missing something. The Mosaic combines pisco brandy with aromatic woods sourced from the Amazon rainforest, served in a painted glass that references Barcelona’s modernist art movement. Both are SIPS originals. Neither belongs on a standard Vegas cocktail list, and that is entirely the point.
When and where
VISTA Cocktail Lounge is open Monday through Thursday from 2 p.m. to 2 a.m., and Friday through Sunday from 10 a.m. to 2 a.m. No reservation required. Tables can be booked at caesars.com for those who want one. The pop-up closes December 31. After that, SIPS goes back to Barcelona.

World’s third-best bar. Two months. One location on the Las Vegas Strip. The overlap between a Caesars Palace anniversary celebration and one of Europe’s most decorated cocktail programs doesn’t happen often. October 31 is the date.
